Easy, Homemade Italian Wedding Soup

If you are craving some soup to warm you up, why not make some Italian wedding soup? Not only is it tasty, it is full of all the vegetables and protein you need in one meal. Ingredients: 3 cans of chicken broth 1 cup white wine 2 pounds boneless, skinless chicken breasts 1 bag of frozen meatballs 2 cups carrots 2 cups onions 2 cups celery 6 garlic cloves 2 cups zucchini ¼ cup basil ¼ cup dill 1 package spaghetti noodles 2 cups spinach 1 cup parmesan cheese Prep: Dice up the carrots, onions, and celery. Peel and dice up the zucchini. Remove the stems from the spinach. Mince the fresh basil, dill and garlic. Set out the frozen meatballs to defrost. Cooking: You will want to use your largest pan. Place it on your largest burner and set the burner to medium. Add the chicken broth and white wine. Wait for it to start boiling. Once the broth and wine is boiling, add in the chicken breast. Turn down the burner so that the chicken breasts are simmering, but not boiling. You want to keep the chicken in the mixture until it is cooked. This will take about 20 or 25 minutes. When the chicken is cooked all the way through, pull it out and cut it up. You should be able to shred the chicken using a fork and a knife. Add the defrosted meatballs to the stock and allow to simmer for 5 minutes for adding any other ingredients. After 5 minutes has passed, add in the package of spaghetti as well as the diced carrots, onions, celery, zucchini, parsley, dill, and garlic. Allow everything to simmer until the noodles are cooked (about 10-12 minutes). Once everything else is cooked, you can add the chicken into the soup again. You don’t want to add the chicken back in before that because it will cause the chicken to be overcooked. Add the parmesan cheese and spinach.
